Herbes is a traditional Mallorcan spirit prepared by macerating aromatic herbs in aniseed-flavoured liquor. Depending on the sugar content and alcohol content, they are classified as sweet, dry and blended. The essential herbs are: lemon verbena, chamomile, rosemary, lemon balm, fennel, orange leaves and lemon leaves.
As it is such a traditional liqueur, each house had its own recipe, which was handed down from generation to generation, a custom that still survives today. According to popular wisdom, aromatic herbs should be harvested in spring and, in addition to the staples, they can include pennyroyal, eucalyptus, spearmint ... up to thirty different types, depending on individual tastes. It can be enjoyed on their own or with ice, as an aperitif or as a digestive after meals.
This liqueur has the Protected Geographical Indication seal Herbes de Mallorca, a guarantee that the product has been made with herbs from the island. Herbes can be tasted in bars and restaurants. There are also companies that run workshops, where participants can discover the secrets of making their own Herbes.
